How we make our ice cream
Step 1 All our milk and cream is delivered daily from Trewithen Dairy in Lostwithiel.
Step 2 We make two separate bases, one vanilla and one chocolate, which we use as the the start of all our flavours. We mix milk, sugar and our secret ingredients in the pasteurising machine which brings the mixture up to temperature and holds its there for half an hour.
Step 3 The machine then chills the mixture and within four hours it is ready and pulled out. This is what we call the base and is acts as a blank canvas to which we add the flavours.
Step 4 We then add our various flavours to the base mix and add it to the churning machine. This is the part of the process which makes us different from other ice cream producers - as the ice cream freezes air is naturally folded into the mix and as a consequence there is a lower ratio of air in our product, creating a better taste and texture on the palate.
Step 5 Once the mixture has been through the churning machine for six to eight minutes, it goes straight in to tubs where we add toppings by hand and then into the freezer.
